Chef and restaurateur Greg Baxtrom and pastry chef Alex Grunert have come together to launch Evi’s Bäckerei, an all-day bakery and café in the Prospect Heights section of Brooklyn, New York. The new concept was designed and built by Baxtrom and his father Mike, who also served in building Baxtrom’s Olmsted and Maison Yaki restaurants. “We wanted to feel the timeless space and ‘Brooklyn,’” explains Backstrom. “We didn’t want to jump into any current direction, but [instead] Create a timeless space that matches what we offer.”
Original brick pillars and floor-to-ceiling windows punctuate the access experience. Black and white tiles extend across the floor, and the space is illuminated by classic school light fixtures. Wooden bread racks and a tall wooden table—sourced from an Amish carpenter in Pennsylvania—moor the interior. Effie also echoes the agricultural component of Backstrom’s earlier designs with a floral arrangement that hints at his culinary portfolio.
